Scientists at the ICAR-National Dairy Research Institute (NDRI) in Karnal have achieved a major breakthrough in dairy processing by developing a patented technology that extends the shelf life of paneer from the typical 8 to 10 days to at least 20 to 21 days.

Led by Dr. Pradip Vishnu Behare from the institute's Dairy Microbiology Division following eight to nine years of research, the technique utilizes an innovative Antimicrobial Coagulant Formulation (AMCF). Unlike conventional chemical preservatives, AMCF integrates biopreservative and coagulating functionality directly into the production process or via a dipping treatment, improving microbial stability while preserving original texture and taste.

ICAR-NDRI Director Dr. Dheer Singh stated that the technology is ready for commercialization and technology transfer, promising greater supply chain flexibility, reduced product wastage, and enhanced market reach for both large dairy processors and small-scale entrepreneurs.
